Penicillin

Blended Scotch, lemon, honey and fresh ginger form a sour with a small Islay-whisky float. Its name does not imply a medical benefit; the smoky whisky is an aromatic finishing ingredient.

Penicillin served in a rocks glass with a slice of candied ginger against a black background.

Active preparation: 4 minutes

Ingredients

  • 60 ml Blended Scotch whisky
  • 7.5 ml Lagavulin 16-year-old Islay whisky
  • 22.5 ml Fresh lemon juice
  • 22.5 ml Honey syrup (1:1 honey to water by volume)
  • 3 piece Fresh peeled ginger, thin slice
  • 1 piece Candied ginger slice, for garnish

Instructions

  1. Press the ginger slices in a shaker, then add blended Scotch, lemon juice and honey syrup. Keep the Islay whisky aside.
  2. Fill the shaker with ice and shake firmly for about 12 seconds.
  3. Fine-strain over fresh ice in a rocks glass.
  4. Float the measured Islay whisky over the surface and finish with candied ginger.
