Non-Alc Midnight Sun

Grapefruit cordial and a full lime measure make this a citrus-led botanical highball. Fresh mint is muddled into the base before shaking, and sparkling water finishes the drink with a lighter texture than a juice-heavy cooler.

Ingredients

  • 30 ml Liber & Co. Rio Red Grapefruit Cordial (non-alcoholic)
  • 60 ml Non-alcoholic tequila alternative, labelled 0.0% ABV
  • 30 ml Fresh lime juice
  • 1 sprig Fresh mint leaves
  • ml Chilled club soda
  • 1 leaf Mint leaf
  • 1 piece Watermelon gummy candy

Instructions

  1. Strip the mint leaves into a shaker and press them gently with the muddler.
  2. Add grapefruit cordial, the non-alcoholic tequila alternative, lime juice and ice; shake for 10–15 seconds.
  3. Strain into an ice-filled highball and top with sparkling water. Add a fresh mint leaf and optional watermelon gummy.
