John Collins

A built mixture of gin, lemon, syrup and soda creates this citrus highball. Unlike an ice-free fizz, the Collins is served over ice and retains a longer, gradually diluting style.

John Collins served in a collins glass with a lemon slice and cocktail cherry against a black background.

Active preparation: 4 minutes

Ingredients

  • 45 ml London dry gin
  • 30 ml Fresh lemon juice
  • 15 ml Simple syrup (1:1 sugar to water by weight)
  • 60 ml Chilled soda water
  • 1 piece Lemon slice or wedge, for garnish
  • 1 piece Cocktail cherry, for garnish

Instructions

  1. Chill a collins glass and measure the ingredients. Fill it with ice.
  2. Add the still ingredients and stir briefly to combine.
  3. Pour in the measured carbonated ingredients slowly, then lift once with a spoon to mix.
  4. Finish with a lemon slice and cocktail cherry and serve promptly.
