Two rum styles meet passion fruit syrup, honey and lime in this crushed-ice drink. A brief blend brings the ingredients together while retaining some ice texture instead of making a completely smooth frozen purée.

Ingredients

30 ml Aged Jamaican rum
15 ml White rum
15 ml Passion fruit syrup, non-alcoholic
15 ml Fresh lime juice
15 ml Honey syrup (1:1 honey to water by volume)
100 g Crushed ice
0.5 piece Fresh passion fruit, for garnish

Instructions

Chill a wine glass and measure the ingredients.
Add the measured ingredients and crushed ice to a blender. Secure the lid.
Blend in short bursts until smooth and evenly combined; stop the machine before adjusting the contents.
Pour into the wine glass.
Finish with half a passion fruit and serve promptly.
