Daiquiri

White rum, fresh lime and sugar make a spare sour that depends on careful measuring. Dissolving the sugar first gives a smooth texture and avoids a sweet layer collecting at the bottom of the shaker.

Daiquiri served in a coupe glass against a black background.

Active preparation: 4 minutes

Ingredients

  • 60 ml White rum
  • 20 ml Fresh lime juice
  • 2 tsp Superfine white sugar

Instructions

  1. Chill a coupe and measure the rum, lime juice and sugar.
  2. Stir the three ingredients in a shaker until the sugar has dissolved.
  3. Add ice and shake briskly for about 10–12 seconds.
  4. Fine-strain into the cold coupe and serve immediately without a garnish.
