Champagne Cocktail

A bitters-soaked sugar cube and a small Cognac measure sit beneath chilled Champagne. Pour the wine slowly: the sugar encourages bubbles, and the drink changes as the cube gradually dissolves.

Champagne Cocktail served in a flute glass with an orange twist and cocktail cherry against a black background.

Active preparation: 4 minutes

Ingredients

  • 90 ml Chilled brut Champagne
  • 10 ml Cognac
  • 2 dash Angostura aromatic bitters
  • 1 piece Sugar cube

  • 1 piece Cocktail cherry, for garnish

  1. Place the sugar cube in a chilled flute and soak it with the measured bitters.
  2. Add the Cognac.
  3. Pour the chilled Champagne in slowly, pausing if the foam rises.
  4. Finish with the orange twist and cocktail cherry without vigorous stirring.
